Pumpkin (Winter Squash) Muffins
Ingredients Procedure

11/2 cups flour
1/2 cup sugar
1/2 tsp. Salt
2 1/2 tsp. baking powder
1/2 tsp. Cinnamon
1/4 tsp. Nutmeg
1/8 tsp. clove
1 egg, beaten
4 tbsp. butter or margarine
1/2 cup milk
3/4cup pumpkin or squash

Prepare the following ingredients as follows: beat egg, melt and cool butter or margarine, cook and mash pumpkin or squash.

Sift the flour, sugar, salt, baking powder, cinnamon, nutmeg, and clove into a large mixing bowl. In another bowl, mix together the remaining ingredients. When thoroughly mixed, stir the milk mixture into the dry ingredients. Stir only until the dry ingredients are moistened. Do not beat. Spoon into well-greased muffin pan. Bake at 400degrees approximately 20 minutes.

Makes 8 Large Muffins
